Instructions

Follow these instructions carefully, and you’ll have a delectable dish ready to impress. The process involves preparing the zucchini, making the savory filling, assembling the rollups, and baking them to perfection.

  1. Preheat and Prep Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or spread about 1/2 cup of the marinara sauce on the bottom. This prevents the rollups from sticking and adds a layer of flavor.
  2. Prepare the Zucchini Ribbons:
    • Wash and trim the ends of the zucchini.
    • Using a mandoline slicer (carefully!) or a sharp vegetable peeler, slice the zucchini lengthwise into thin ribbons, about 1/8 inch thick. You want them thin enough to be pliable but not so thin they fall apart. Discard the first and last seedy slices.
    • Lay the zucchini ribbons on a baking sheet lined with paper towels. Sprinkle them lightly with salt. Let them sit for about 10-15 minutes. This process, called “sweating,” draws out excess moisture, which prevents the final dish from being watery and makes the zucchini more flexible for rolling.
    • After 10-15 minutes, gently pat the zucchini ribbons dry with more paper towels to remove the drawn-out moisture and excess salt.
  3. Cook the Aromatics: While the zucchini is sweating, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  4. Cook the Chicken: Add the ground chicken to the skillet with the onions and garlic. Break it apart with a spoon and cook, stirring occasionally, until it’s browned and cooked through, about 8-10 minutes. Drain any excess fat from the skillet if necessary. Remove from heat and let it cool slightly.
  5. Prepare the Filling: In a large bowl, combine the cooked chicken-onion mixture, ricotta cheese, 1/2 cup of grated Parmesan cheese, the beaten egg, chopped fresh parsley, chopped fresh basil, Italian seasoning, 1/2 teaspoon of salt (or to taste, considering the saltiness of your cheeses), and black pepper.   6. Assemble the Zucchini Rollups:
    • Lay a zucchini ribbon flat on your work surface. If your ribbons are narrow, you can slightly overlap two ribbons side-by-side to create a wider base.
    • Spoon about 1-2 tablespoons of the chicken and ricotta filling onto one end of the zucchini ribbon (or overlapped ribbons). The amount will depend on the width and length of your zucchini slices.
    • Carefully roll up the zucchini ribbon snugly around the filling, starting from the end with the filling.
    • Place the rollup seam-side down in the prepared baking dish. Repeat with the remaining zucchini ribbons and filling, arranging the rollups tightly together in the dish. You might have some leftover filling or zucchini, depending on their sizes.
  7. Sauce and Cheese:
    • Pour the remaining marinara sauce evenly over the top of the zucchini rollups. Ensure they are well-covered, but not drowned.
    • Sprinkle the shredded mozzarella cheese evenly over the sauced rollups. If desired, sprinkle a little extra grated Parmesan cheese on top for more flavor.
  8. Bake to Perfection:
    • Cover the baking dish loosely with aluminum foil. This helps the rollups cook through without the cheese browning too quickly.
