  • English Cucumbers (2 large): These are essential for their length, minimal seeds, and thin skin, which makes them perfect for creating long, pliable ribbons without the need for peeling. Their mild, sweet flavor is the ideal vessel for the creamy filling.
  • Full-Fat Cream Cheese (8 ounces / 226g): Softened to room temperature. Using full-fat cream cheese is key to a rich, luscious, and stable filling that won’t become watery.
  • Fresh Dill (2 tablespoons): Finely chopped. Fresh dill provides a bright, slightly anise-like flavor that pairs beautifully with cucumber and cream cheese.
  • Fresh Chives (2 tablespoons): Finely chopped. Chives add a delicate, mild oniony flavor that enhances the savory notes of the filling without overpowering it.
  • Garlic Powder (1/2 teaspoon): This adds a subtle, savory depth and a hint of warmth to the creamy mixture.
  • Onion Powder (1/2 teaspoon): Complements the garlic powder and chives, rounding out the savory profile of the filling.
  • Salt (1/4 teaspoon): Or to taste. Salt is crucial for bringing all the flavors together and enhancing the overall taste.
  • Black Pepper (1/4 teaspoon): Freshly ground, for a touch of spice and complexity.
  • Optional Addition: Thinly Sliced Smoked Ham or Beef (4 ounces / 113g): Finely chopped. For a heartier roll-up with a savory, smoky protein boost.

Instructions

  1. Prepare the Cucumber Ribbons: Wash and thoroughly dry the English cucumbers. There is no need to peel them, as the skin adds color and helps the ribbons hold their shape. Using a mandoline slicer on its thinnest setting (around 1/16th inch) is the most effective method for creating long, uniform ribbons. If you don’t have a mandoline, a wide vegetable peeler will also work. Lay the cucumber flat on a cutting board and press down firmly with the peeler, creating long, even strips from one end to the other. Discard the first and last few slices that are mostly skin. You should aim for about 20-25 usable ribbons.
  2. Dry the Ribbons: This is a critical step to prevent watery roll-ups. Lay the cucumber ribbons in a single layer on a tray or cutting board lined with paper towels. Place another layer of paper towels on top and gently press down to absorb as much excess moisture as possible. Let them sit for about 10-15 minutes while you prepare the filling. This step ensures your filling stays creamy and the roll-ups remain crisp.
  3. Create the Creamy Filling: In a medium-sized mixing bowl, combine the softened cream cheese, finely chopped fresh dill, finely chopped fresh chives, garlic powder, and onion powder. It is vital that the cream cheese is at room temperature to ensure a smooth, lump-free consistency. Mix with a spatula or an electric mixer on low speed until all the ingredients are well-combined and the filling is smooth and creamy.
  4. Incorporate Optional Protein: If you are adding smoked ham or beef, now is the time to fold the finely chopped meat into the cream cheese mixture. Stir gently until it is evenly distributed throughout the filling.
  5. Season the Filling: Season the cream cheese mixture with salt and freshly ground black pepper. Mix once more and taste. Adjust the seasoning if necessary, adding more salt, pepper, or herbs to suit your preference.
  6. Assemble the Roll-Ups: Take one of your dried cucumber ribbons and lay it flat on a clean work surface. Using a small spatula or a butter knife, spread a thin, even layer of the creamy filling over the entire surface of the cucumber ribbon, leaving a small 1/4-inch border at one of the short ends. Be careful not to overfill, as this will cause the filling to squeeze out the sides when you roll it.
  7. Roll and Secure: Starting from the end with the filling spread all the way to the edge, carefully and tightly roll the cucumber ribbon up into a spiral. The small, bare border you left at the other end will help the roll-up seal itself. The natural moisture and the creamy filling will help it adhere.
  8. Arrange and Chill: Place the finished roll-up seam-side down on a serving platter or a tray lined with parchment paper. This prevents them from unrolling. Repeat the process with the remaining cucumber ribbons and filling. Once all the roll-ups are assembled, cover the platter with plastic wrap and transfer it to the refrigerator to chill for at least 30 minutes. This step is crucial as it allows the filling to firm up and the flavors to meld together, resulting in a more stable and delicious final product.
