Avocado Shrimp Cucumber Bites

  • Author: Ashley

Ingredients

  • Cucumber: 2 large cucumbers, straight and firm, to provide a crisp and refreshing base for the bites.
  • Avocado: 2 ripe avocados, creamy and smooth, to create a rich and healthy filling. Look for avocados that yield slightly to gentle pressure.
  • Cooked Shrimp: 1 pound cooked shrimp, peeled and deveined, providing a protein-packed and flavorful element. Choose medium or small shrimp for easier bite-sized portions.
  • Lime Juice: 2 tablespoons fresh lime juice, to brighten the flavors, prevent avocado from browning, and add a zesty kick. Freshly squeezed is always best for optimal flavor.
  • Red Onion: 1/4 cup finely diced red onion, adding a subtle sharpness and contrasting texture. Mince it finely to ensure it’s not overpowering.
  • Cilantro: 1/4 cup chopped fresh cilantro, contributing a fresh, herbaceous note that complements the other ingredients. Flat-leaf parsley can be used as a substitute if you are not a fan of cilantro.
  • Jalapeño (optional): 1 small jalapeño, finely minced (seeds removed for less heat), for a touch of spice. Adjust the amount to your spice preference or omit entirely.
  • Olive Oil: 1 tablespoon extra virgin olive oil, to add richness and help bind the avocado mixture. Choose a good quality olive oil for the best flavor.
  • Salt and Pepper: To taste, enhancing the overall flavor profile of the bites. Freshly ground black pepper is recommended for a more pungent aroma.

Instructions

  1. Prepare the Cucumbers: Begin by thoroughly washing the cucumbers. Pat them dry with a clean kitchen towel or paper towels. Trim off the ends of each cucumber. Depending on the size of your cucumbers and desired bite size, you can either cut them into 1-inch thick rounds or slice them lengthwise into thicker planks. For rounds, simply slice across the cucumber. For planks, cut the cucumber in half lengthwise and then slice each half into 1/2-inch to 1-inch thick pieces. Using a small spoon or a melon baller, gently scoop out a small well in the center of each cucumber slice. This well will hold the avocado shrimp mixture. Be careful not to scoop too deep, you want to maintain a sturdy base.
  2. Prepare the Avocado Mixture: Halve the avocados lengthwise, remove the pits, and scoop the flesh into a medium-sized mixing bowl. Immediately squeeze the fresh lime juice over the avocado flesh. This will not only add a bright, citrusy flavor but also prevent the avocado from oxidizing and turning brown. Using a fork, mash the avocado until it reaches your desired consistency. You can choose to leave it slightly chunky for a more rustic texture or mash it completely smooth for a creamier filling.
  3. Combine Ingredients for the Filling: To the mashed avocado in the bowl, add the cooked shrimp. If using larger shrimp, you might want to roughly chop them into smaller, bite-sized pieces. Add the finely diced red onion, chopped fresh cilantro, and minced jalapeño (if using). Drizzle in the extra virgin olive oil.
  4. Season and Mix: Season the avocado shrimp mixture generously with salt and freshly ground black pepper to taste. Start with a pinch of salt and pepper and then adjust to your preference. Gently stir all the ingredients together until they are well combined and evenly distributed throughout the avocado mixture. Taste the mixture and adjust seasoning as needed, adding more lime juice, salt, pepper, or jalapeño to achieve your perfect flavor balance.
  5. Assemble the Cucumber Bites: Now it’s time to assemble the delicious Avocado Shrimp Cucumber Bites. Take each prepared cucumber slice with the scooped-out well. Using a small spoon or your fingers, carefully fill each cucumber well with a generous spoonful of the avocado shrimp mixture. Be sure to distribute the filling evenly among all the cucumber bites. Gently press the filling down slightly to ensure it sits nicely in the cucumber cups.
  6. Garnish (Optional): For an extra touch of visual appeal and flavor, you can garnish the Avocado Shrimp Cucumber Bites. Consider adding a small sprig of fresh cilantro on top of each bite. A tiny sprinkle of red pepper flakes can add a pop of color and a hint of extra spice. A thin slice of lime or a microgreen can also be used for garnish.
  7. Chill and Serve: Once assembled, it’s best to chill the Avocado Shrimp Cucumber Bites in the refrigerator for at least 15-20 minutes before serving. This chilling time allows the flavors to meld together and helps the cucumber bites become even more refreshing. Chilling also helps the avocado mixture firm up slightly, making them easier to handle and eat. Serve chilled and enjoy these delightful and healthy appetizers immediately for the best taste and texture. If you are preparing them in advance, keep them refrigerated and consume within a few hours to maintain the freshness of the cucumber and avocado.
